The largest of all flatfish, Halibut can stretch up to 8 feet long, 4 feet across and weigh over 600 pounds!
Halibut, with it's very mild yet sweet tasting dense meat, can be prepared in a variety of ways including: poached, steamed, pan fried, grilled and even battered then deep fried. Perhaps you could try this next time:
Place your Halibut in a greased, shallow baking dish. Season with salt, pepper & tarragon. Dot it with butter & sprinkle with chopped shallots. Cover with sour cream & bake at 375 until fish flakes when tested with a fork. Before serving, garnish with parsley or chives or sprinkle with paprika.
